The flavours of the Park on your table

The Christmas market is back with products from the Park: zero-kilometre quality thanks to the farms and processing companies that operate within the boundaries of the Migliarino San Rossore and Massaciuccoli protected area, following the environmental and production rules of the Authority. The event will take place on Saturday 6 and Sunday 7 December from 10 a.m. to 7 p.m. in the Sala Gronchi in Cascine Vecchie, near the San Rossore entrance. This is another opportunity for citizens to discover the Park's excellent food products or to give them as gifts to relatives and friends who want to try them during the Christmas season.

New this year is locally sourced beef produced on the San Rossore organic farm, calves that are born and raised exclusively on the estate and fed only on pasture and hay and fodder grown on site, and honey from the Lame di Fuori nature reserve, produced by bees that collect nectar from flowers growing there, including limonium, sea chamomile, sea lily, sea holly, and beach grass. You will also find the classic San Rossore pine nuts, with their unique aromatic and organoleptic properties, beach honey with its intense and unmistakable flavour, seasonal vegetables, and the renowned Pisan piattella.

Among the specialities are spices harvested by hand to create blends of varying degrees of spiciness to enrich dishes, such as Mitmita, Berberé, Ethiopian curry, and Teff, an ancient grain grown between the sea and pine forests that is naturally gluten-free. The wines of the Park are produced on the Versilia coast, cultivated organically with a characteristic minerality due to the salty air and sand: whites, reds, rosés and sparkling wines, including bottles aged in the sea. In Coltano, sheep farms produce excellent dairy products: pecorino cheeses of various ages, ricotta, yoghurt, lactose-free pecorino cream, plain and truffle flavoured. And then there are pickles, honeydew, oil, wild boar meat, cacciatorini salami, game ragù, mortadella with pine nuts from the park; special beers and spirits such as Tuscan red beer with beach honey, piccantino and grappa with myrtle, juniper and beach honey, and pine nut liqueur.
